20 Culinary Arts Classroom Must-Haves

Kitchen Equipment for an Intro to Culinary Arts Classroom

You may face the new challenge of teaching culinary arts education or a family consumer sciences foods class. The first question is usually, what do I need in the classroom? We often get asked what a new food teacher needs to use in the Intro to Culinary Arts Curriculum or CTE Culinary Mega Bundle of Resources. Unfortunately, many schools do not have a professional kitchen waiting for you, and you need the basics to get the ball rolling and help students with the art of cooking.

You may be lucky enough to enter a culinary arts program with many essentials ready for you and your Culinary or FCS students. Or maybe you have additional funds to spend and want to add to the program. Here is a list of items Chris believes are must-haves in a culinary arts classroom.

1- Skillets – 8”

Skillets for frying, toasting, searing, sauteing, etc. If possible, you want 8″, 10″, and 14″ skillets. An 8″ skillet is suitable for cooking an order of eggs. A 10″ skillet would be for making a pasta dish with a serving of 2 or searing a couple of pieces of chicken. A 14″ skillet would be for larger amounts of pasta, meats, etc.

Various sizes of skillets are essential for different cooking techniques, from sautéing vegetables to searing meats. The variety allows for flexibility in the kitchen, accommodating different recipe requirements and portion sizes, including preparing fresh pasta dishes.

2- Saucepans – 

Saucepans are crucial for boiling, simmering, and making sauces, which are all important aspects of culinary education. Their different sizes allow for cooking various quantities, making them versatile for various culinary tasks. We have two of each size for optimal classroom learning.

1 quart size for heating up small amounts of liquid and soups.

7 qt, which is suitable for rice. 

10 qt for larger quantities of soups and liquids.

3- Stockpots – 

8-quart size is the smaller end and is excellent for stews, chilis, and stocks. 10-quart and 12-quart sizes are for larger quantities.

Stockpots are perfect for making soups, stews, boiling pasta, and stocks. Their large capacity is ideal for preparing meals for larger groups of culinary students or when you make a big batch of stock to store, which is often necessary in a classroom setting.

4- Rondeau –

A rondeau is used for stews, searing meats, and one-pot dishes. It is often found in the restaurant industry. By incorporating a rondeau into the culinary classroom, students gain hands-on experience with a key piece of professional kitchen equipment and learn techniques fundamental to various culinary applications.

5- Sheet Trays – Full½¼

Sheet trays are used for baking, roasting, and organizing ingredients. Different sizes cater to various recipes and portion needs, ensuring efficient use of oven space. They are indispensable in a culinary classroom for baking cookies, roasting vegetables, and preparing sheet pan meals, allowing students to practice essential cooking techniques while maximizing productivity in the kitchen.

6- Hotel Pans – Full½, , 1/6

Hotel pans are versatile for cooking and storing food. Their various sizes allow for efficient organization and portion control, essential for managing a busy kitchen. In a culinary classroom, hotel pans play a crucial role in batch cooking, holding prepped ingredients, and keeping food warm during service, making them indispensable for teaching students about kitchen organization and production efficiency in food lab work.

7- Blender – Vitamix or Similar –

A high-powered blender is indispensable for making smoothies, soups, and purees. It ensures smooth textures and quick preparation times, aiding in the efficiency of cooking lessons. Blenders are usually students’ favorite pieces of kitchen equipment, and they can provide soft skills that equip them with ways to make healthy and delicious meals for themselves.

A food processor simplifies tasks like chopping, slicing, and grating, saving time and ensuring consistency. It is particularly useful for preparing large quantities of ingredients and making purees, pastes, cheese slicing cheese, onions, and other vegetables.

In a culinary classroom, a food processor takes ingredient preparation to the next level, streamlining processes and allowing students to explore culinary creativity and recipe development easily. Thus, it is a must-have tool for any aspiring chef.

9- Stand Mixer –

Stand mixers are very helpful for baking. They allow hands-free mixing of doughs and batters, ensure consistency, and are easy to use, making them a staple in any culinary classroom. They are essential for bread dough, cake batters, cookie dough, and whipped cream.

11- Silicone Baking Mat or Parchment Paper –

Silicone baking mats and parchment paper prevent sticking and make cleanup easier, enhancing students’ understanding of culinary foundations like kitchen organization and cleanliness. They are reusable and provide a non-stick surface for baking, ensuring that baked goods release easily and maintain their shape.

12- Plates –

Plates are essential for serving and presenting finished dishes. They are necessary for both classroom tastings and teaching proper plating techniques. We use acrylic plates for the classroom. 

13- Paper Products –

Paper products, such as napkins and paper towels, are crucial for maintaining cleanliness and hygiene in the kitchen. They help manage spills and ensure a tidy workspace. Serving boats are great to have on hand for serving food. Souflet cups are great for individual servings of sauces, dressings, and spices. These are great for mise en place before students cook a recipe.

14- Whisks

Whisks are essential for mixing, beating, and aerating ingredients. They are versatile tools used in various cooking and baking tasks. Having 2 to 3 of different sizes is also a good idea. Whisks are particularly useful for whipping cream, emulsifying vinaigrettes, and blending sauces, ensuring smooth and consistent results.

15- Cutting Boards

Cutting boards provide a safe and hygienic surface for food preparation. Using multiple boards helps prevent cross-contamination, especially when working with different types of food, such as those prepared in the garde manger station. They are essential for chopping vegetables, slicing meats, and preparing cold dishes, ensuring that each ingredient is handled safely and effectively.

16- Knives

Knives are crucial for precision and safety in food preparation. These knives will help prepare students with knife skills and give them hands-on experiences. 17- Mixing Bowls

Mixing bowls combine ingredients, prepare batters, and prepare salads. Their variety of sizes ensures versatility in the kitchen. They are essential for tasks such as mixing dough, tossing salads, and marinating meats. Mixing bowls are also useful for mise en place, allowing students to organize and measure out ingredients before cooking. Mixing bowls is essential for all grade levels and provides an excellent opportunity for independent work, depending on the recipe.

18- Measuring Cups and Spoons

Accurate measurement is essential for recipe success. Measuring cups and spoons help teach students the importance of precision in cooking and baking. These go along with lesson plans on kitchen measurement and recipe conversions.

19- Spatulas (Rubber Scrapers)

Spatulas are versatile tools used for flipping, spreading, and mixing. They come in various shapes and materials to suit different tasks and culinary skills. We like the 500° F heat-resistant ones because students accidentally melt the other kinds. Spatulas are also essential for scraping down the sides, mixing bowls, folding ingredients into batters, and spreading frostings or fillings. Their flexibility and durability make them a great way to learn culinary techniques in any culinary classroom.

20- Aprons

If you can afford one for each student, that’s great. We don’t have that luxury, but we purchase these kitchen aprons when we have the budget. Depending on your budget, these are also an excellent way to incorporate your school’s logo or personalize it with students’ names. They’re not just a piece of fabric; they’re a practical necessity that ensures our focus stays on learning and creating delicious dishes without worrying about spills or stains.
